Lime Health Salad

1/2 cup Water
1T. Unflavored gelatin
1 cup White grape juice concentrate
1/4 cup Fresh lime juice
1 cup Cabbage, finely chopped
1/4 cup Carrots, finely shredded  
Directions Stir water and gelatin together and let sit for five minutes to soften. Add grape juice concentrate, lime juice, then bring to near boil, while stirring. Remove from heat and chill for 1 hour. Add cabbage, carrots, and peppers. Fold togeth- er and chill for four hours, serve.
