1 cup cooked Garbanzo Beans 1 cup cooked Adzuki Beans
cup cooked Kidney Beans
1/2 quarts water or vegetable stock 1/2 cup Pearled Barley
stalks celery, chopped
carrot, thinly sliced
16 oz. can whole peeled tomatoes, chopped 12 oz. can tomato juice
tbsp. Unrefined Olive Oil
onion, chopped 1/2 cup parsley, chopped 1/2 cup spinach, chopped
cloves garlic, mashed 1 tsp. Oregano
bay leaf 4 tbsp. red wine
tbsp. Parmesan cheese 2 tbsp. tamari soy sauce
Salt to taste Sauté onion, parsley, spinach, garlic, and herbs in olive oil until tender. • Mix all ingredients except wine, soy sauce, and parmesan cheese.Directions
Simmer covered for 1 hour.
Stir in wine, soy sauce and Parmesan cheese before serving.
