SNITZ AND KNEPP ( WITH MEAT)

1½ pounds cured ham or 1 ham hock 2 cups dried apples 2 tablespoons brown sugar  Directions Wash dried apples, cover with water and soak overnight. In the morning, cover ham with cold water and cook slowly for 3 hours. Add apples and water in which they soaked. Add brown sugar and cook 1 hour longer.

For Knepp or dumplings:

2 cups flour  ½ tsp. salt  3½ tsp. baking powder  1 egg, beaten 2 tablespoons butter  1/3 to 1/2 cup milk  Directions Sift together dry ingredients. Stir in beaten egg and melted butter. Add milk to make a batter stiff enough to drop from a spoon. Drop batter by spoonfuls into boiling ham and apples. Cover pan tightly and cook dumplings 10 to 12 minutes. Do not lift cover until ready to serve. Serves 8.
