Strawberry Short Cake

1 tbsp. vegetable oil  1 egg, beaten 1/3 cup maple syrup or honey 1 cup low-fat milk, soy milk or water 1 1/4 cups Multigrain Pancake & Waffle Mix  3/4 cup Oat Bran 1 tsp. non-alum baking powder 2 cups strawberries, whole Directions Combine liquids then stir in mix, oat bran, and baking powder. Pour batter into a square oiled cake pan, and bake at 350° F. for 15 to 20. minutes. Place whole straw- berries in a saucepan. Stir and cook down (sweetener may be added if desired). Serve strawberries over indi- vidual slice of cake.
