Zucchini Burgers

2 c. grated zucchini (about 3 medium) 2 eggs ½ c. Texturized soy protein reconstituted with ½ c. boiling broth ¾ c. grated Monterey Jack cheese  1/3 c. chopped mushroom ¼ c. finely chopped onion ½ t. salt ¼ t. thyme ¼ t. rosemary Pepper to taste Soy oil for frying Directions Combine zucchini, eggs, TSP, cheese, mushrooms, onion and seasonings; mix well. Shape into patties. Heat soy oil over me- dium-high heat, add patties and cook until golden brown, about 4 min. on each side. Serve in buns with catsup, mustard or pick- le relish, if desired or use as a vegetable side dish.
