½ cup fresh cranberries
1 egg
¼ cup honey
3 tbsp. melted butter
¾ cup milk
1 cup quick oatmeal
1 cup whole wheat pastry flour
1 tbsp. baking powder
1 tsp. dried orange peel
Directions
Place cranberries, egg, honey, butter, and milk in a blender and blend well. Stir remaining dry ingredients together, then add the liquid mixture and mix well. Half fill 12 oiled muffin cups and bake at 400ºF. for 25 to 30 minutes until nicely browned.
