½ c. vegetable shortening
½ cup butter or marg, softened
1 cup packed brown sugar
1 cup sugar
2 eggs
1 tsp. vanilla extract
1½ c. all purpose flour
1 tsp. baking soda
3 cups quick oats
1 cup chopped dates (optional)
½ cup chopped walnuts
1 tsp. salt (optional)
Directions
Preheat oven to 350ºF. Lightly grease cookie sheet. Beat shortening and butter or margarine until creamy. Add eggs and vanilla; beat well. Combine flour, baking soda and 1 tsp. salt. Add to shortening mixture, mix well. Stir in oats, dates & nuts; mix well. Roll into ¾” balls and place 2” apart on prepared cookie sheet.
Bake 10 to 12 minutes or until lightly browned. Let stand 1 minute before removing to racks to cool. Makes 8 servings.
