1 cup Texturized soy protein soaked in 7/8 cup boiling water
1 medium onion, chopped
2 cloves garlic, minced 1 T. soy (vegetable) oil 1 c. cooked rice
1 cup tomato sauce
¼ cup walnuts 4 bell peppers
2 cup vegetable broth
Directions:
Sauté the onion and garlic in the oil until tender. Mix all ingredients except the peppers. Cut off the top of the peppers and remove seeds. Stuff each pepper with the mixture. Place pep- pers in a baking pan and pour vegetable broth around the base of the peppers. Cover and bake for 30 min. at 350 degrees.
